In Windows 10, I only have three resolution options:
5120x2880, 3840x2160, 3200x1800
These are the only resolutions that Far Cry 5 will see if I want to play the game in full screen. I was really looking for a 1440p option or even 1080p so I can improve my FC5 framerate without sacrificing too much quality.
I'm using Radeon 18.3.1, iMac 2017 5K with Radeon Pro 580. I have read that the previous iMac had 1440p, but the option disappeared with the 2017 model.
Any suggestions?

Try changing the resolution to 2560x1440 in Windows 10's Display Settings (you may then need to sign out of Windows and sign back in) before launching the game. That should do the trick.

Well what I was saying was in the Display Settings for Windows 10, I don't get a 1440p option.
I have now installed version 18.3.4 of the drivers, and I can now see an option for 2560x1440 in Windows. I noticed that if I turn on GPU Scaling in the Radeon settings, then this greatly reduces the amount of resolution options. This might have been the problem. So currently GPU Scaling is set to off.

Ah, I misunderstood you. I've encountered some games that won't offer 2560x1440 if my iMac's display is set to 5120x2880 in Windows 10, even with GPU Scaling off and Windows 10 offering 2560x1440. (If I recall correctly, Shadow of Mordor is one such game.) I've read reports of other games that have problems if one doesn't set a lower resolution in Windows 10 before launching the game, and I've encountered that myself with Age of Empires II HD.
